
Simply place cauliflower chunks in a food processor and pulse until broken down into rice-size pieces. Heat olive oil in a skillet over medium head; add cauliflower 'rice', salt, and pepper. Cover skillet and cook until heated through, 3 to 5 minutes. Remove lid and fluff 'rice' with a fork.
Feeling a little spicy? Make cauliflower fried rice--Sauté peas, green onion, garlic, a little ginger in a little olive oil until softened and then stir in cauliflower, low sodium soy sauce, and I add a little teriyaki sauce for an extra kick. Toss in a scrambled egg for extra protein or add sautéed chicken or shrimp if you want as well. Voila! A tasty, healthy meal ready in just minutes! High protein and carb free!!
